These are some things that I’ve made recently, along with the accompanying food porn photos…
Vietnamese Noodle Bowl:

This is my take on what I guess is called Bo Ngu Vi Huong or Bỏ ngũ vị hương which Google translates to “Remove these five directions.”
I first tried this at the New Saigon here in Denver (voted best vietnamese food in Denver and often referred to as some of the best in the US), and I have made it a few other times. I’m really pleased with the way that the textures and flavors combine to form a great dish.



Ingredients:
Rice noodles (vermicelli), flank or skirt steak, lettuce (this time I went with butter lettuce) , mint leaves finely chopped, cilantro loosely chopped, shredded cucumber, shredded or finely chopped carrots, sliced serrano peppers, chopped roasted peanuts, lime slices for juice and garnish.
Meat Marinade:
Soy sauce, fish sauce, sesame seed oil, Mirin (sweet rice wine), lime juice, salt, pepper, garlic powder, and crushed red peppers.
After salting and peppering the flank steak, cut it into small thin pieces. Add in the rest of the ingredients of the marinade, let the meat sit, and get to chopping the vegetables. I like to use a coarse cheese grater on the cucumber and I go back and forth with using it on the carrots or just chopping them thinly.
Get the rice noodles out and fire up a pot of boiling water. Once you have it a a full boil throw them in for 2-3 minutes and immediately strain them.
The meat you can grill if you want to on skewers, but I ended up frying mine in a pan with the marinade, because my grill has been a real bitch lately. The meat is already very thin, so it shouldn’t take long to cook to the middle, keep stirring it to try to get some level of consistency in the cooking.
To build each bowl, put down a base of torn lettuce leaves, a couple pinches of cucumber, carrots, peppers, mint, and cilantro. Fill out the majority of the remaining space with the rice noodles. Top it off with another round of vegetables and herbs, followed by meat, drizzle lime juice over it all, add the chopped peanuts, and some soy sauce to top it off.
BOOM!
The amount that I made, works out to about 4 bowls worth. Enjoy and beware, those peppers are spicy !
